The measure of grower Champagne

Extra brut is made from Chardonnay, Pinot Noir and Pinot Meunier by traditional bottle fermentation, but its character hinges on the dosage. Zero to six grams of residual sugar per litre are permitted, for brut up to twelve. The dosage often comes from the grower’s own reserve wine and rounds off the acidity without tasting sweet. In the glass it is precise and taut, dry and yet fleshy.

At Living Wines they come from organic or biodynamic viticulture, from the Montagne de Reims as well as the chalky Côte des Blancs. Growers such as Huré Frères give the wines time in the cellar. Well chilled, they go with fish and shellfish and gain depth with age.
