The half bottle follows its own rules

The demi-bouteille holds 37.5 cl, or three glasses. As in the standard format, the second fermentation takes place in the bottle, but the wine matures faster and asks to be drunk young. From Chardonnay, Pinot Noir and Pinot Meunier come wines of clear freshness, suited to a glass for two, a single course of a meal or a picnic.

Living Wines stocks grower Champagnes from organic or biodynamic viticulture, from Huré Frères on the Montagne de Reims among others, along with blanc de blancs from the Côte des Blancs. Most are non-vintage cuvées whose style the house holds steady over the years. Well chilled at eight to ten degrees, they show at their most precise.
