The family-run Pertois-Lebrun winery in Cramant is one of those quiet revolutionaries that interpret Chardonnay in its purest form. No compromises when it comes to dosage, no whitewashing in the cellar. Instead, they work on a plot-by-plot basis in the Grand Cru vineyards of Chouilly, Le Mesnil-sur-Oger and Cramant, where the chalky soils give the wine the vibrant tension that characterises great champagne. The wines are character studies of their origins - straightforward, honest, electrifyingly lively.

Where chalk meets purism
In Cramant, in the heart of the Côte des Blancs, the winery is as unpretentious as its champagnes taste. No pompous buildings, no marketing-driven stories - just the uncompromising conviction that great champagne is created in the vineyard and merely accompanied in the cellar. The family cultivates around eight hectares in the best vineyards. Grand Cru sites of the region, planted exclusively with Chardonnay. Chouilly with its deep chalky soils, Le Mesnil-sur-Oger with its legendary minerality, Cramant itself with its special elegance - each parcel is vinified individually in order to preserve its specific terroir.
The vineyards are cultivated with the utmost care, the soil is alive and chemical intervention is kept to an absolute minimum. Here they understand that Chardonnay on chalk can develop a precision reminiscent of cut glass - cool, clear, penetrating. Yields are consistently kept low, the grapes are harvested and selected by hand. What sounds simple requires decades of experience and the courage to forgo quantity in difficult years.
Cellar work as the art of restraint
A philosophy of non-intervention reigns in the cellar. The base wines mature in Stainless steel tanks and partly in old wooden barrels, The aim is never for the wood to dominate, but merely to allow gentle oxidative ageing. Malolactic fermentation is decided according to vintage and parcel - sometimes carried out for more suppleness, sometimes blocked for additional freshness and longevity. The dosage remains radically low: Extra Brut is standard here, with some cuvées even Brut Nature without any added sugar.
The L'extravertie 2021+Réserve combines the energy of a young vintage with the complexity of reserve wines and shows how lively and accessible Blanc de Blancs can be without sacrificing substance. The long ageing on the lees - at least three years, often much longer - gives the wines that creamy texture that softens the bony acidity without domesticating it.
Particularly impressive are the Single-vineyard champagne, that reflect the terroir without filters. The Le Chetillons N°16 Mesnil sur Oger from the 2016 vintage comes from one of the most famous sites in Champagne and displays the steely elegance for which Le Mesnil is renowned - a Champagne of cutting precision and enormous ageing potential.

Character heads with speaking names
The names of the cuvées reveal a lot about the house's self-perception. „L'Ambitieuse“ - the ambitious one - or „L'Egoiste“ - the egoist - are not marketing gags, but a commitment to an uncompromising style. The Derrière le Mont Aigu N°18 Sans Sulfites Ajouté goes one step further: a champagne without any added sulphites, vinified in the vineyard behind Mont Aigu in Chouilly. This shows how clear and pure Chardonnay can taste if you trust it and don't use oenological tricks to trim it down.
These wines need time in the glass, often years in the bottle. They are not easy-drinking champagnes for quick enjoyment, but dialogue partners that demand and reward attention. Those who engage with them will experience champagne in its most intellectual and sensual form.

Pertois-Lebrun and the grower movement
The winery is an example of the Grower Champagne movement, The winegrowers who cultivate, press and market their grapes themselves. In a region that has long been dominated by large trading houses, this independence is a conscious decision. Pertois-Lebrun shares this philosophy with neighbours such as Larmandier-Bernier or Vazart-Coquart & Fils, who also place terroir above all else in the Côte des Blancs.
The production volume is deliberately kept to a minimum - this is the only way to maintain this level of quality. Each bottle is still shaken by hand, an anachronism in times of automated gyro pallets, but a statement. These champagnes are rare, not because they are artificially scarce, but because real manual labour takes time and the best plots are limited. Once you have drunk them, you will understand why Blanc de Blancs from the Côte des Blancs is considered the supreme discipline of Champagne.
