Character
The AUSTRAL Brut Nature 2022 by Clandestin bears its name with deliberation: Austral – the southern. It represents the south-facing side of Clandestin’s range „Les Semblables“: 100% Pinot Noir, pressed white as a Blanc de Noirs, crafted without any dosage. Clandestin stands for an independent, artisanal winemaking philosophy that places transparency and authenticity above convention.
Terroir & Origin
The home is the Côte des Bar in the south of Champagne – not the chalk of the Marne, but Kimmeridge marl (clay-limestone as in Chablis) with Portlandian limestone in the subsoil, at around 200 metres elevation. Austral comes from the south-facing parcels: the full sun gives it more ripeness, depth and vinous richness than its north-facing counterpart Boréal. The warm vintage 2022 amplifies this richness – with a Brut Nature without dosage, the terroir is reflected unfiltered.
Grape Variety & Vinification
Pure Pinot Noir – the red soul of Champagne – pressed white as a Blanc de Noirs. Fermented spontaneously with indigenous yeasts in wooden barrels, aged long on fine lees and disgorged without the addition of liqueur d’expédition: Brut Nature, zero grams of residual sugar. This demands impeccable fruit and precise cellar work – a Champagne that refuses to please, but rather to be true. In the glass: ripe yellow fruit and mirabelle plum, candied lemon, a spicy gingerbread note and saline minerality.
Food Pairing Recommendations
The dry, crystalline structure calls for substantial dishes. Oysters and raw shellfish are classic companions, as are beef tartare or aged Comté. Thanks to its depth, Austral also carries grilled turbot or Asian-spiced dishes with umami.
