Champagne in magnums matures more slowly
The magnum holds one and a half litres, twice the standard bottle, and the wine inside has completed its second fermentation in that very bottle. With less oxygen per litre it matures more slowly, the mousse grows finer and the wine keeps longer. Chardonnay brings drive and coolness, Pinot Noir and Pinot Meunier substance.
The focus of the selection at Living Wines lies in the Côte des Bar, where growers such as Olivier Horiot work biodynamically and tend the rare Arbanne alongside the classic varieties; from the Côte des Blancs come blancs de blancs shaped by chalk. Before serving, the large format needs longer on ice; afterwards it fills ten to twelve glasses.
