Colour & Appearance
Medium straw yellow, luminous and clear, with a steady, fine-beaded mousse that reveals precision and craftsmanship.
Nose
The nose moves within a fascinating tension: warm brioche and fresh yeast pastry meet cool, saline minerality and delicate oxidative notes. Between them shines a restrained, mature fruit – yellow apple, pear, a whisper of white peach. Complex, multifaceted, never loud.
Palate
On the palate, a razor-sharp dryness unfolds, immediately provoking salivation. The texture is creamy and cloud-like, the mousse silky – and yet the structure remains taut and precise. A vibrant, mature acidity runs like a red thread through the wine, lending it tension and depth. Not a gram of dosage, no compromise: this Champagne means business.
Finish
Long, saline, relentlessly dry. The finish is mineral and draining – you drink, and thirst grows. A Champagne that belongs at the table, not to fleeting aperitifs.
Terroir & Origin
The grapes come from 35 parcels in the Premier Cru villages of Chamery, Vrigny and Coulommes-la-Montagne – vineyard sites of the Petite Montagne de Reims, an often underestimated yet characterful corner of Champagne. The vines average 35 years old and yield grapes with depth and expression.
Grape Variety & Vinification
A blend of 40 % Pinot Noir, 30 % Chardonnay and 30 % Meunier, supplemented by 40 % reserve wines following the Solera method – a continuous memory of past harvests. Vinification takes place 75 % in stainless steel, 25 % in oak barrels; malolactic fermentation is deliberately allowed. Unfiltered, with minimal 22 mg sulphur before bottling and no dosage.
Food Pairing Suggestions
A Champagne for the table, not for greeting. Ideal with aged Comté, oysters with seafood, ceviche or sashimi. Also a revelation with pan-seared scallops with cauliflower.
