Wine Description for Trop m’en faut by Drappier
- Colour & Appearance
- Pale golden yellow with characteristic, light cloudiness – a sign of work without filtration. The mousseux presents itself lively and persistent, with a fine perlage rising elegantly in the glass.
- Nose
- Expressive and idiosyncratic. The varietal Pinot Gris reveals a dense bouquet of nutty apples and melon, underpinned by a subtle lactic note reminiscent of fresh cheese. To this are added stone spice, earthy lichen notes, a hint of pepper and the rustic character of farmhouse bread. A champagne that prioritises character over conformity.
- Palate
- Spicy, juicy and of remarkable individuality. The texture is soft and inviting, whilst the acidity acts with drive and vitality – a tension-filled interplay. Soft stone fruit notes meet fresh pineapple, complemented by earthy and herbal-spicy nuances. Precisely defined and clear in direction, yet always lively and authentic.
- Finish
- Medium length with persistent spice and a refreshing acidity structure that invites the next sip. The earthy components linger and underscore the natural character.
- Terroir & Origin
- Sourced from the organically farmed Parcelle de Tuchots in Champagne. The cuvée combines equal parts of the 2017 and 2018 vintages, guaranteeing complexity and depth.
- Grape Variety & Vinification
- A varietal Fromenteau (Pinot Gris), after mechanical pressing aged partly in wood, partly in stainless steel. Tirage in April 2019, without dosage – a true Brut Nature. The disgorgement date is engraved on the bottle bottom, emphasising transparency and craftsmanship.
- Food Pairing Suggestions
- The spicy character harmonises beautifully with Himmel und Äd, pasta with peas, lemon and artichokes or ceviche with pear chutney. Also an excellent choice with mushroom dishes and aged cheese.
- Special Features
- A bold champagne that deliberately ignores conventions. The idiosyncrasy of Pinot Gris, combined with organic viticulture and zero dosage, makes this sparkling wine an authentic statement for individuality and terroir expression.
