Wine Description for Trop m’en faut by Drappier

Colour & Appearance
Medium, luminous yellow with a lively, fine-pored mousse – the first hint that this is no ordinary Champagne in the glass.
Nose
Unusual and captivating: apple, mirabelle plum and fresh citrus fruits form the framework, yet it is the interplay with fennel fronds, celery and a subtle oyster shell that makes this nose so unmistakable. Added to this are nuances of nuts, fresh bread and delicate apple skin. A nose that intrigues and captivates.
Palate
On the palate, the „Trop m’en faut“ surprises with remarkable freshness and energy – more forceful and lively than the multifaceted nose might suggest. Not a stern, closed Champagne, but an open, generous wine: spicy, saline, with a playful, mouth-watering acidity and a smooth, rounded texture. Tender stone fruit, pineapple and a hint of zest lend depth and vibrancy to the palate.
Finish
Long, silky-juicy and characterised by elegant spice. The finish is inviting and pure – a quiet promise of another glass.
Terroir & Origin
The grapes come from the Parcelle de Tuchots, an organically farmed single vineyard site in the heart of Champagne. The biodynamic philosophy of the Drappier house is directly reflected in the character of this wine.
Grape Variety & Vinification
A single varietal Fromenteau – the old Champagne name for Pinot Gris – a true rarity in the region. The cuvée combines 50% each of the 2017 and 2018 vintages. Maturation partly in wooden barrels, partly in stainless steel, tirage in April 2019. Neither dosage nor significant sulphites – a Champagne in its purest, unadorned form. The disgorging date is engraved on the bottle bottom.
Food Pairing Suggestions
The saline spice and lively acidity make this Champagne the ideal companion for oysters, scallops with fennel or a turbot tartare. It also reveals its full potential with aged Comté or a simple vichyssoise.
