A son who vinifies for his mother. The vineyards of Champagne Françoise Martinot in Celles-sur-Ource and Chervey belong to its namesake - but the grapes are vinified by her son Charles Dufour, one of the most sought-after winegrowers on the Côte des Bar. The Bistro days-Cuvées are his tribute to them.

Françoise herself was the driving force behind the Conversion to organic farming Charles consistently pursues her vision: spontaneous fermentation with wild yeasts, ageing in wooden barrels, No added sulphur. Four hectares Pinot Noir on warm marl soils - champagne with a Burgundian soul.
