At lebendigeweine.de, we have selected our finest companions from over 300 wines with truffle recommendations. The golden rule: Truffles demand elegance, not power.

White truffle from Alba meets Nebbiolo from Piedmont – the most classic of all combinations. Black truffle from Périgord harmonises with Burgundian Pinot Noir. And with truffle and egg? That’s where Champagne and Crémant show their true class. For porcini, chanterelles and mushroom risotto we have a separate selection.

White truffle – Nebbiolo from Piedmont

Tajarin with white truffle - watercolour

Tajarin al Tartufo Bianco, Fonduta with white truffle, Risotto alla Piemontese – the white Alba truffle is the crown jewel of the truffle world. Its intense, garlicky-earthy aroma demands wines with equally distinctive character.

Nebbiolo from Piedmont is the classic partner: the Langhe region is home to both truffle and grape. Barolo and Barbaresco bring rose aromas and firm tannins – they frame the truffle aroma without overpowering it.

Our tip: Never heat white truffle! Always shave it fresh over the finished dish. The wines should have aged for at least 3-5 years.

Black Truffle – Burgundy Pinot Noir

Filet Rossini with black truffle - Watercolour

Tournedos Rossini, Foie Gras with truffle, Bœuf en Croûte – the black Périgord truffle is the star of French haute cuisine. Its intense, nutty-earthy aroma demands Pinot Noir with depth and elegance.

Burgundy Pinot Noir is the classic choice: the earthy notes of these wines mirror the truffle aroma, the silky texture caresses the sumptuous dishes. From simple Bourgogne to the great Gevrey-Chambertin.

Our tip: Black truffle tolerates brief warming better than white. A lightly chilled Burgundy (16°C) allows the aromas to shine optimally.

Truffle Pasta – White Burgundy

Fettuccine al Tartufo - Watercolour

Tagliolini al Tartufo, Fettuccine con Tartufo, truffle butter pasta – when truffle meets pasta, a dish of striking simplicity is born. Butter, Parmesan, pasta, truffle – nothing more is needed. The wine must be creamy and elegant.

White Burgundies are the first choice here: Chardonnay with subtle oak notes complements the buttery sauce, the creaminess mirrors the texture of the pasta. A fine Pinot Gris from Germany also pairs beautifully.

Our tip: The pasta should only be served with butter and Parmesan – no cream! The truffle needs room to shine.

Truffle with Egg – Sparkling Wine & Elegance

Fried egg with truffle shavings - Watercolour

Truffle omelette, fried egg with truffle, scrambled eggs with truffle – the combination of egg and truffle is a classic of simple luxury cuisine. The creamy yolk carries the truffle aroma perfectly. This calls for sparkling wines with finesse.

Champagne and Crémant are the ideal partners: the fine bubbles cleanse the palate, the yeast notes complement the umami aromas of egg and truffle. From elegant Crémant to Grand Cru Champagne.

Our tip: Store eggs for 24 hours with the truffle in a sealed box – they will absorb the aroma. Season the fried egg only with Fleur de Sel.

Storing & Using Truffle Correctly

Fresh truffle is delicate – with proper storage, the aroma lasts longer.

Store truffle in a mason jar 1. Cool & dry Wrap in kitchen paper, change daily. Store in an airtight glass jar in the fridge (2–4°C). Never in plastic!
Shave fresh truffle 2. Use quickly White truffle: 4–5 days. Black truffle: 7–10 days. The aroma fades fast – don’t hoard!
Store truffle with eggs in the fridge 3. Store with eggs Store truffle with eggs in a glass jar. The eggs absorb the aroma – perfect for truffle scrambled eggs the next day.

Golden rule: Never heat white truffle – always shave it over the finished, warm dish at the end. Black truffle tolerates 1–2 minutes of heat.

Frequently Asked Questions

Which wine pairs best with truffle?

It depends on the truffle variety: With white Alba truffle, Nebbiolo from Piedmont (Barolo, Barbaresco) is perfect. Black Périgord truffle harmonises with Burgundy Pinot Noir. For truffle and egg, we recommend Champagne or Crémant. In general: elegant wines rather than powerful ones.

Why does Barolo pair so well with white truffle?

Barolo and white Alba truffle come from the same region – the Langhe in Piedmont. The aromas have „grown accustomed“ to each other over centuries: the rose scent and earthy notes of Nebbiolo complement the intense truffle aroma perfectly. It is one of the most classic combinations in Italian cuisine.

Does red wine or white wine pair better with truffle?

Both can work! Red wine (Nebbiolo, Pinot Noir) pairs with truffle dishes featuring meat or white truffle on pasta. White wine (Burgundy Chardonnay) harmonises with truffle-butter pasta. And sparkling wine is ideal for truffle egg. The preparation determines the wine colour.

What is the difference between white and black truffle?

White truffle (Tuber magnatum) comes from Piedmont, has a more intense aroma and is never heated. Black truffle (Tuber melanosporum) comes mostly from Périgord, has a nutty-earthy aroma and tolerates brief heating. White truffle is more expensive and is served only shaved raw.

What is a good affordable wine to pair with truffle?

Our value-for-money recommendations: Langhe Nebbiolo from Sottimano as an introduction to the Nebbiolo world, Bourgogne rouge from Trapet for black truffle, or Crémant de Loire from Liv Vincendeau as an elegant Champagne alternative. All demonstrate quality without a large budget.
