Storing & Using Truffle Correctly
Fresh truffle is delicate – with proper storage, the aroma lasts longer.
1. Cool & dry
Wrap in kitchen paper, change daily. Store in an airtight glass jar in the fridge (2–4°C). Never in plastic!
2. Use quickly
White truffle: 4–5 days. Black truffle: 7–10 days. The aroma fades fast – don’t hoard!
3. Store with eggs
Store truffle with eggs in a glass jar. The eggs absorb the aroma – perfect for truffle scrambled eggs the next day.
Golden rule: Never heat white truffle – always shave it over the finished, warm dish at the end. Black truffle tolerates 1–2 minutes of heat.

Which wine pairs best with truffle?

Why does Barolo pair so well with white truffle?
Barolo and white Alba truffle come from the same region – the Langhe in Piedmont. The aromas have „grown accustomed“ to each other over centuries: the rose scent and earthy notes of Nebbiolo complement the intense truffle aroma perfectly. It is one of the most classic combinations in Italian cuisine.
Does red wine or white wine pair better with truffle?
Both can work! Red wine (Nebbiolo, Pinot Noir) pairs with truffle dishes featuring meat or white truffle on pasta. White wine (Burgundy Chardonnay) harmonises with truffle-butter pasta. And sparkling wine is ideal for truffle egg. The preparation determines the wine colour.
What is the difference between white and black truffle?
White truffle (Tuber magnatum) comes from Piedmont, has a more intense aroma and is never heated. Black truffle (Tuber melanosporum) comes mostly from Périgord, has a nutty-earthy aroma and tolerates brief heating. White truffle is more expensive and is served only shaved raw.
