Colour & appearance
Light golden yellow with a fine, persistent perlage - a visual indication of the long bottle ageing period of over twelve years.
Nose
Complex, multi-layered bouquet that elegantly reveals the barrel ageing. Initially surprising Exotic notes of pineapple and mangoaccompanied by Agrumen, ripe pear and candied ginger. Underneath unfolds Stone fruit, Vanilla and Puff pastry, while subtle oxidative notes of Wax and Honey emphasise maturity.
Palate
The champagne is initially supple and mature with a crumbly fruit, Ripe citrus fruits and candied lemon peel. Vanilla, Puff pastry and Brioche flavours coat the palate with a pleasant fullness. Then the surprising interplay: a fresh, urgent acidity swirls through the fruit flavours and reveals the impressive vitality of this mature champagne - a prime example of the balance between maturity and liveliness.
Departure
Long-lasting and multi-layered. Salted caramel, Iodine, Apple and Citrus peel linger on the palate for minutes - a remarkable finish that emphasises the complexity of this exceptional champagne.
Terroir & origin
The grapes come from vines over 50 years old from the Côte de Sézanne with its characteristic chalky, calcareous and loamy soils - a terroir that gives this champagne its mineral depth and structure.
Grape variety & vinification
An even assemblage of one third each Meunier, Pinot Noir and Chardonnay. Spontaneous fermentation and maturation for ten months in used Burgundian pièces. Brut Nature - Zero grams of dosage at dégorgement in July 2022. Limited production of only 1,432 bottles.
Food pairing suggestions
Excellent for Veal liver with spiced apples and marjoram, Rosa Bianca melanzani with strawberries and turnips or Meadow herb shepherd's cheese ravioli with truffles.
