Olivier Langlais – Champagne Solemme

The name says it all: "Sol" for sun, "emme" for woman – Olivier Langlais wants to make champagnes that are feminine and radiant. To achieve this, he stands in the vineyard at night, spraying biodynamic preparations according to the lunar calendar. Champagne Solemme in Villers-aux-Nœuds has been organic-certified since 2013, works biodynamically and forgoes everything that distances the wine from its terroir: no chaptalisation, no filtration, no cold stabilisation, no dosage.

Moon, Sun, Wine

In 2006, Olivier Langlais took over the family estate from his father; in 2009, he founded the Solemme label – a name that combines sun (sol) and moon (lune). The 6.11 hectares of Premier Cru in Villers-aux-Nœuds lie in the heart of the Petite Montagne de Reims – a cool corner with high rainfall, where Jean Servagnat also works in nearby Coulommes-la-Montagne. The soil of chalk, limestone and flint shapes the champagnes just as much as the biodynamic cultivation: Langlais even disgorges according to the lunar calendar. Demeter certification came in 2015, after years of conversion.

62 Per Cent Meunier

The grape variety distribution is typical for this area: 62% Pinot Meunier, 30% Chardonnay, only 8% Pinot Noir. Langlais sees Meunier not as a gap-filler, but as a distinctive grape variety with character. All base wines ferment spontaneously in small batches, maturing partly in 228-litre barriques, partly in steel. At least 36 months on the lees – time you can taste. The Plénitude as an entry point already shows the signature: precise, dry, with fine chalky minerality.

Zero Dosage, Full Expression

Langlais bottles almost exclusively Brut Nature – without dosage liqueur, without sugar, without compromise. The Nature de Solemme is pure Chardonnay from a single parcel, the Ambre a Blanc de Noirs with a hint of rosé character through brief maceration. Every vintage is a Millésimé – nothing is blended here that doesn't belong together. Annual production is around 30,000 bottles.

Craft Over Technology

The stirring vessel for biodynamic compost tea stands in the courtyard, not hidden away. Langlais makes no secret of his philosophy: the exchange between soil and grape is everything. What happens in the cellar should only make this exchange visible – not obscure it. The vineyards are ploughed with horses, weeds are removed by hand. This effort pays off: the wines of Solemme are amongst the most sought-after biodynamic champagnes in the region.
