Anyone who observes Thomas Bouley in the vineyard understands his wine. Each vine receives individual attention, each grape is scrutinised as if everything depended on it - which it does. In 2002, when he was just twenty years old, he joined his father Jean-Marc and vowed to take the Domaine in Volnay to the top. Today, he is mentioned in the same breath as Frédéric Lafarge. Eight hectares are spread over 29 plots in Volnay, Pommard and Beaune - a mosaic of Burgundy vineyards that Thomas interprets in the greatest variety. Organic cultivation without a seal, biodynamic influences without dogma, use of wood with sensitivity: never more than 50% new barrels, so that fruit and elegance play the leading role.

29 plots, one credo: precision in the vineyard
Volnay is Pinot Noir country. Located between its neighbours Pommard and Meursault, this appellation produces wines that are more impressive for their finesse than their power. Thomas Bouley has internalised this. On his 29 different plots works so meticulously that one employee is sometimes only responsible for a few hectares. Grassing in winter to prevent erosion, weeding in summer to regulate moisture - traditional methods that he combines with modern knowledge. The Volnay AOC shows at the entry level what this meticulousness leads to: a Pinot Noir with a silky texture and flavours of sour cherry and violets.

Organic without a seal, biodynamic without dogma
Thomas does not use synthetic products or herbicides - he has been making a consistent switch since he joined the farm. One Official organic certification He deliberately does not wear a label, but documents his practice with a seal of honour. Cosmic rhythms are incorporated into the pruning and bottling of the vines, without him completely submitting to the biodynamic rules. „It's about healthy grapes,“ he says, „not ideology.“ He keeps yields low and manual labour high. He shares this philosophy with colleagues such as Chandon de Briailles, also at home in the Côte de Beaune.
Wood as a tool, not a flavour
The trade press praises his A sure instinct for using wood. Depending on the vintage, the wines mature for 15 to 20 months in oak barrels, with the proportion of new wood remaining below 50%. For its premiers crus such as the Volnay 1er Cru „Carelle sous la Chapelle“ he chooses barrels that frame the fruit instead of overlaying it. Whole-cluster fermentation and spontaneous fermentation are standard, fining and filtration are the exception. The result: wines full of energy that inspire when young and can mature for decades.

From Volnay to Pommard: the portfolio
The top wines are called Volnay Les Caillerets and Pommard Les Rugiens - two premier cru sites that showcase Thomas's skills. But also the Volnay „Vieilles Vignes“ from old vines deserves attention: more concentrated, deeper, with a longer finish. The range is complemented by a remarkable Aligoté - crisp, mineral, the perfect introduction to the world of bouleys. Caution, say connoisseurs: addictive potential.
