The year trumps the house style

A vintage Champagne gathers the harvest of a single year and is made only when the grower judges the year sound enough. Made from Chardonnay, Pinot Noir and Pinot Meunier, it matures for at least 36 months on the lees, more than twice as long as a non-vintage Champagne, and with the years brioche, nut and honey take their place beside the fruit.

The weight of the selection lies in the Côte des Bar in the south of Champagne, where growers such as Olivier Horiot work biodynamically. Younger vintages up to 2023 stand alongside mature ones back to 2006, and a mature wine deserves cellar temperature, a large glass and a meal with mushrooms or mature cheese.
