- Terroir & Origin
- Home is the Côte des Bar in the south of Champagne, on Kimmeridge marl – clay-limestone as in Chablis, not the chalk of the Marne. Whilst its twin Austral comes from the south-facing slopes, Boréal hails from the cooler, north-facing parcels: the reduced sunlight preserves acidity and finesse. The warm vintage 2022 brought ripeness and density, which gain particular weight in a Brut Nature.
- Grape Variety & Vinification
- Pure Pinot Noir is the backbone of this Champagne – here from the north-facing slope, which gives it structure and considerable mineral tension. Fermented spontaneously in wooden barrels, aged on fine lees and disgorged without any dosage. With Brut Nature, the rule is: what the wine brings must stand on its own merits – no correction, no embellishment. Boréal is the more delicate, cooler and more linear of the two twins, with redcurrant, red apple and grapefruit, wet stone, lime and a taut, saline freshness.

- The taut, fresh structure makes it an ideal companion for oysters and seafood, but also for grilled lobster or fine goat’s cheese. The depth of the Pinot Noir also complements charcuterie and more robust hard cheeses.
