Wine Description for AUSTRAL Brut Nature 2023 by Clandestin

Character
The AUSTRAL Brut Nature 2023 is a Champagne that knows no compromise. As a Brut Nature – meaning without any dosage whatsoever – it stands for radical honesty: what the grape yields lands unfiltered in the glass. No sugar masks it, no topping smooths it over. This is Champagne in its purest, most direct form – for those who value precision over palatability.
Terroir & Origin
The Champagne region owes its significance to a contradiction: cool climate, the Kimmeridgian marl-limestone soil of the Côte des Bar (clay-chalk as in Chablis, not the chalk of the Marne), a nature that demands everything from the vines. It is precisely this tension that creates the characteristic acidity structure and mineral depth that define a great Champagne. The vintage 2023 was marked by exceptional warmth in Champagne – bringing ripeness and fruit richness, yet requiring craftsmanship to preserve freshness and vibrancy.
Grape Variety & Vinification
Pure Pinot Noir – the red soul of Champagne. This grape variety brings structure, depth and silky fruitiness that finds elegant complexity even in the Blanc de Noirs style. As a Brut Nature, Clandestin forgoes the addition of liqueur d’expédition entirely: the wine stands on its own, unadorned. This approach demands impeccable grape quality and precise cellar technique – there is no way to hide mistakes. The name Clandestin hints at a deliberately withdrawn, artisanal philosophy, far removed from the bright spotlight of the Champagne industry.
Food Pairing Suggestions
The austerity and directness of a Brut Nature demands food that can hold its own. Oysters and seafood are the classic companions – the saltiness of the sea mirrors the wine’s minerality. It also harmonises beautifully with beef tartare, raw tuna or a simple pea shoot risotto. For the adventurous, serve it with aged Comté – a play of nuttiness, spice and cool freshness.
