  • The Triologie KM-1 2022 by Clandestin is a single-varietal Pinot Noir from the Côte des Bar in the southern Champagne – a wine born of Kimmeridgian soils, vinified by Benoît Doussot with a Burgundian touch and organically grown grapes.
  • 🎨 Colour: Cool, medium-deep ruby red with violet reflections at the rim of the glass.
  • 👃 Aroma: Wild strawberries and red cherries, accompanied by floral notes, delicate spice and a saline-mineral undertone from the Kimmeridgian marl.
  • 👅 Palate: Lean and taut on the palate, with juicy red fruit, fine-grained tannins, vibrant acidity and a saline, incisive finish.
  • 🎭 Character: A cool, terroir-driven Pinot Noir – more Burgundian and finesse-laden than opulent, with a clear line and mineral tension.
  • 🍽️ Food pairing: Perfect with duck breast in cherry sauce, mushroom dishes such as porcini risotto or mild soft cheese.
  • ✨ Special features: Behind Clandestin stands Benoît Doussot, a graduate of the Lycée Viticole in Beaune and former pupil of Jean-Philippe Fichet in Meursault. The grapes come exclusively from organic growers in the Côte des Bar, whose vineyards rest on fossil-rich Kimmeridgian and Portlandian – soils that make the Côte des Bar geologically closer to Chablis than to Reims.

Wine description for Triologie KM-1 2022 by Clandestin

Character
A Champagne made from pure Pinot Noir that speaks with the voice of the southern Champagne: cool, mineral, with a finely drawn structure and the slender elegance one would sooner expect in Meursault than in Reims. No dosage, no excess weight – Brut Nature in its most pared-back form, yet fine-bubbled and carried by a saline tension.
Terroir & Origin
The Côte des Bar, in the far south of Champagne, is geologically closer to Chablis than to the great houses of the north. Instead of young chalk, the vines here rest on Kimmeridgian marl and Portlandian limestone from the Jurassic period – soils rich in fossilised seashells that lend the wines their striking minerality and delicate salinity. Benoît Doussot, who learnt his craft under Jean-Philippe Fichet in Meursault and began working alongside Bertrand Gautherot (Vouette & Sorbée), sources his grapes exclusively from eleven growers who farm organically – some of whom he actively supported during their conversion.
Grape Variety & Vinification
Pinot Noir is the soul of the Côte des Bar – here it reveals itself as cool and precise rather than opulent. Doussot’s Burgundian schooling is reflected in the cellar: spontaneous fermentation, ageing in larger 500- to 600-litre casks that keep the base wines slender, along with maturation in wood and at least 15 months on the lees following the second fermentation in bottle. Vinification is carried out by gravity in the winery completed in Landreville in 2023 – gently, without pumps, without dosage.
Food Pairings
The mineral tautness and the undosed style call for refined, not overly heavy cuisine: oysters or grilled scallops, sashimi, accompanied by fresh goat’s cheese or a young Comté. It also makes a harmonious companion at the table alongside roasted poulet de Bresse with light sauces.
