- Terroir & Origin
- The Côte des Bar in southern Champagne sits on Kimmeridge marl – clay-limestone as found in Chablis, overlaid with Portlandian limestone. The abbreviation „KM“ stands for Kimméridgien: the three Triologie cuvées trace the layers of one and the same slope. KM-3 comes from the highest section, where the limestone content increases and the marl layer becomes thinner. The warm vintage 2022 brought ripeness without flattening the mineral tension of this elevated site.
- Grape Variety & Vinification
- Pure Pinot Noir, gently pressed as white wine in the Blanc de Noirs style. Spontaneously fermented in wooden casks, aged on fine lees and disgorged without any dosage (Brut Nature, 0 g/l). KM-3 is the most austere and vertical of the three: ultra-mineral, linear, with razor-sharp acidity and saline finish – and considerable ageing potential of around fifteen years.

- The cool precision of KM-3 demands clear flavours: oysters, tuna tartare or grilled turbot are ideal partners. Sashimi or young goat’s cheese also underscore its saline-mineral character.
