Deep, luminous salmon pink with a fine mousse – typical of the saignée method.

Intensely fruity with redcurrant, wild raspberry and blood orange, accompanied by floral notes and a hint of brioche and spicy yeast.

Dry, powerful and juicy with vibrant acidity, a fine trace of tannin and a saline, precise finish.

Independent and unadorned – a nature-driven rosé Champagne with depth that deliberately remains raw and honest.

Cured salmon, charcuterie and grilled entrecôte.
Notes
Ecocert-certified organic farming since February 2019, fermentation with wild yeasts, ageing in used wooden casks, neither fined nor filtered – as a Brut Nature completely without dosage, from one of the smallest producers in the Côte des Bar.
Tasting note
Character
A rosé Champagne of unusual directness: bottled without dosage, hence Brut Nature in the purest sense. Pinot Meunier takes centre stage here — with aromas of red berries, delicate spice and a lively, linear freshness. A single-parcel wine rather than a styled product: what ends up in the bottle is meant to speak of its origin.
Terroir & Origin
Raphaël Piconnet grew up on the Lieu-dit Bichery in Neuville-sur-Seine, where his grandfather Charles tended the slopes above the Seine for decades. The Côte des Bar, the chalk-driven south of Champagne, long stood in the shadow of the Montagne de Reims — today it is the stage for a quiet renaissance. The estate has been Ecocert-certified since 2019; Raphaël and his wife Hannah vinified their first Champagne in 2015.
Grape variety & Vinification
Pinot Meunier — as the name of the wine reveals: Saignée, meaning a rosé obtained by bleeding off the juice, which coaxes darker fruit and greater depth from the grapes. Spontaneous fermentation with wild yeasts is just as much a matter of course at Domaine de Bichery as ageing in used wooden casks, the decision not to fine or filter, and a minimum of sulphur. At least 24 months on the lees lend the wine its fine, taut edge.
Food recommendations
A Champagne for the table, not merely for the aperitif: wonderful with salmon trout with beetroot, duck breast or roasted pigeon. Charcuterie, lentil salad with bacon or a medium-aged Comté also find a genuine counterpart in its fruity precision. Serve lightly chilled and enjoy from a white wine glass — the 2022 will gain further depth with a few years of bottle rest.
