Wine Description for Vignes Dieu Blanc Coteaux Champenois 2022 by Bonnet-Ponson

Colour & Appearance
Delicate straw yellow with bright reflections and fine green nuances – a wine that still displays its youth, yet already hints at remarkable depth.
Nose
Here a still wine from Champagne reveals itself in all its complexity. The nose is multifaceted and timeless: subtle smokiness and yeast notes meld with delicate fruit – grilled pineapple, green mango, grapefruit and pear. Interwoven is a nutty depth of hazelnut and walnut, accompanied by bread-like components such as sourdough crust and fresh baguette. The spice palette ranges from clove and cinnamon to cardamom and lemon thyme – a calm, saturated aromatics full of tension.
Palate
Slender, textured and carried by fine minerality. Despite moderate 12% alcohol, the wine displays enormous presence: gripping, saline, with subtle fine structure. The fruit remains discreet in the background, whilst nutty and spicy notes dominate. The interplay of salt, minerals and spices lends it an almost meditative depth – a wine that has arrived without ever seeming heavy.
Finish
Long, mineral and characterised by saline freshness. The spicy components linger, whilst a fine smokiness plays across the palate – elegant and precise.
Terroir & Origin
The Chardonnay vines were cultivated in 1968 through mass selection in Coulommes-la-Montagne. Facing south-east, these old vines are rooted in a chalk-clay mixture – classic Champagne terroir that guarantees tension and minerality.
Grape Variety & Vinification
100% Chardonnay from vines over 50 years old. Spontaneous fermentation in 600-litre oak barrels, followed by impressive 30 months on lees – a vinification that unites patience and craftsmanship, bestowing upon the wine its extraordinary complexity.
Food Pairing Recommendations
A wine for fine dining: roasted turbot with nut butter, scallops on celeriac cream, Poulet de Bresse with morels, calf’s sweetbreads or mature Comté. The saline minerality harmonises perfectly with oysters or langoustines.
Special Characteristics
A still Champagne wine that demonstrates what the region can achieve beyond the bubbles. With its maturity, elegance and depth, it embodies a place of calm in the glass – perfect in its current drinking window, yet with potential for further years.
