Colour & Appearance
Luminous old gold with a fascinating rusty shimmer. The fine, persistent perlage bears witness to artisanal quality – a visual promise that this unfiltered Champagne delivers on the palate.
Nose
Initially restrained, the Demi-Sec opens with air to reveal a true aromatic feast: candyfloss and marshmallows give way to fully ripe stone fruit – rosy-cheeked apples and juicy pears dominate. These are joined by sugared nuts and roasted almonds, evoking Christmas markets. A Champagne that demands generous Burgundy glasses to unfold its full potential.
Palate
Creamy, velvety, voluptuous – this Demi-Sec is pure hedonism. The 40 grams of residual sugar never feels clumsy, but rather embedded in a silky texture. Toffee and caramel complement the fruit aromas, whilst a hint of sea salt provides electrifying tension. The mousse fizzes like stardust on the palate – fine-grained, elegant, irresistible.
Finish

From Avize, one of the most prestigious Grand Cru villages of the Côte des Blancs. De Sousa manages the vineyards with horses to avoid soil compaction and preserve the microbiome – biodynamics in its purest form.
Grape Variety & Vinification
Classic blend of 50% Chardonnay, 40% Pinot Noir, 10% Pinot Meunier. Disgorged on 28 September 2023, unfiltered bottling – a small sediment is possible and a sign of authenticity. The style deliberately recalls historical Champagnes of the 19th century, when Demi-Sec was the norm.
