Parellada

Also known as: Montonega, Montonec (Catalonia)

Parellada is the most delicate of the three Cava grape varieties – light, aromatic, with a subtle citrus note. Where Xarello provides structure and Macabeu body, Parellada brings elegance and floral freshness. In the blend it works unobtrusively, but its absence would be noticeable.

The variety originates from the higher elevations of Penedès, where cooler temperatures preserve acidity. Vinified as a still wine, it shows itself light and accessible, without great ambitions – an everyday grape with charm, not a statement variety.

At Gramona and Recaredo it is an integral component of the classic cuvées. The Nin Ortiz Family uses it in more experimental approaches, Celler Credo shows it as a still wine.
