- Colour & Appearance
- Luminous, pale straw yellow with golden reflections. The perlage is restrained yet lively – fine-bubbled and persistent, as befits a hand-crafted Pet Nat.
- Nose
- Here unfolds a complex, yeasty aromatic profile with remarkable depth. Notes of yeast pastries, butterscotch and shortbread meet yellow fruit aromas of apricot, mirabelle and peach. Less citric than typical Cava, instead broader and more voluminous – with pear at the centre. Spicy accents of cinnamon and white pepper, plus nutty tones of almonds and cashew. Mediterranean herbs – sage, thyme, oregano – lend additional complexity. The overall impression remains chalky-mineral, precise and elegant.
- Palate
- The carbonation strikes with purpose, bringing freshness and structure without dominating. Slender, racy, invigorating – carried by perfect tension between yellow fruit, acidity and minerality. The chalky notes are present but stylishly restrained. In the background reveal themselves pale nut notes – almonds, cherry stones – as well as delicate hints of linden and apple blossom. A wine with character that remains charming and accessible despite its complexity.
- Finish
- Medium length, mineral-precise, with lingering notes of yellow fruit and fine spice. The freshness persists to the end.
- Terroir & Origin
- The grapes come from vineyards in proximity to the sea in Penedès, on sandy granite soils at 100–220 metres elevation. The maritime location and mineral soils decisively shape the character of this Pet Nat.
- Grape Variety & Vinification
- Produced according to the Méthode Ancestrale from the classic Catalan varieties Xarel·lo, Macabeu and Parellada. The must begins to ferment and completes fermentation in the bottle. This is followed by 15–24 months on the lees, which imparts the wine its yeasty complexity and depth.
- Food Pairing Suggestions
- Perfect as an aperitif or with grilled prawns, oysters, scallops or sushi. Also an excellent choice with goat’s cheese, sautéed mushrooms or pasta with lemon and herbs.
- Special Characteristics
- A Pet Nat with distinctive profile – less citric than classic Cava, instead more yellow-fruited and voluminous. The combination of traditional production methods and modern style makes this sparkling wine particularly exciting. With only 11% alcohol, it remains light-footed and elegant.
