What sets Gramona apart from other Cava producers is their radical approach to biodynamic winemaking. As early as 2000, the family converted all 150 hectares to organic cultivation – at a time when this was still revolutionary in Penedès.

The soils around Sant Sadurní d'Anoia, where Xarello, Macabeu and Parellada thrive, shaped by limestone and fossil deposits, respond exceptionally well to this natural management. Javier Gramona and his team understand their vineyards as a living ecosystem, in which every intervention is carefully considered. This philosophy is reflected in each of their sparkling wines – from the fresh clarity of the La Cuvee Brut 2019 to the complex depth of the Enoteca Brut Nature 2012.
Craftsmanship Meets Innovation
In Gramona's underground cellars, over four million bottles are stored – an impressive testament to patience and quality. The traditional bottle fermentation using the méthode champenoise is not merely practised here, but perfected. Particularly fascinating is the use of solera systems for certain cuvées, a technique normally associated with sherry.
