Colour & Appearance

Luminous straw yellow with green reflections. The perlage is remarkably vital – medium-pored, evenly distributed, with immediately ascending, long-lasting mousse. A visual promise of freshness and vibrancy.

Nose

Initially, a clear, almost provocative sharpness emerges from carbonation and sulphur – deliberately applied, not intrusive. With air, an elegant aromatics unfolds: finely chopped almonds, almond and apple blossom, alongside a precise fruit palette between mirabelle plum and star fruit, green and yellow apples, pears at various stages of ripeness. A bitter undertone, flanked by lemon and bergamot zest, brings tension. The almond character merges with brioche notes of shortbread and plaited sweet bread with icing sugar – approachable yet distinctly terroir-driven.

Palate

Full-bodied and space-filling, with effervescent mousse that lines the palate. The pronounced, excellently integrated acidity stands up to the pressure effortlessly. A fascinating interplay between power and elegance, fruitiness and structure. Fine minerality provides order and clarity – organised, focused, remarkably well-balanced.

Finish

Clearly defined, with persistent freshness and mineral precision. The wine remains stringent through to the end.

Terroir & Origin

From Penedès, produced by Aliances per la Terra – an association of biodynamic winemakers under the direction of Gramona. Numerous vineyards are united here into one greater whole, a collaborative project that combines classical Cava tradition with biodynamic principles.

Grape Variety & Vinification

Classical Cava cuvée: 55% Xarel·lo, 30% Macabeu, 10% Parellada, 5% Chardonnay. Whole-bunch pressing with approximately 50% extraction, second fermentation according to family recipe, 18 months on lees. Disgorgement of this batch in October 2024 – freshly released to market.

Oysters, scallops, ceviche, pan-fried prawns, goat’s cheese salad with almonds, risotto with lemon and herbs, light spring vegetable tempura. A versatile companion for aperitif and light Mediterranean cuisine.
