Wine Description for Imperial Brut 2019 by Gramona

Colour & Appearance
Luminous straw yellow with delicate, pale reflections. The perlage is even, calm and of medium to robust intensity – a picture of restraint and precision.
Nose
The nose opens with a dry, almost meditative character: dried wildflower meadows, straw and Mediterranean herbs – chervil, marjoram, tarragon, sage. Beneath this, a precise, structuring salinity that recalls sea air and limestone. Pale fruit – green pear, white peach – swings elegantly alongside, flanked by citrus zest from kaffir lime and bergamot. The yeast presents itself classically and grounded: salted biscuits, fresh yeast – present, but never intrusive.
Palate
On the palate, the aromatic picture continues with remarkable consistency. The wine is closed, precise and of high finesse – not an opulent sparkling wine, but one that convinces through tension and lightness. Terroir and origin speak clearly and directly. The drinking appeal is extraordinarily high.
Finish
Long, clear and of fine elegance. In the aftertaste, the familiar interplay of citrus, crumbly biscuits and saline freshness – carried by clarity and a hint of mineral depth.
Grape Variety & Vinification
A blend of 58% Xarel·lo, 33% Macabeu, 5% Parellada and 4% Chardonnay – each variety vinified separately to unlock its full potential. Following bottle fermentation, the wine aged 50 months on the lees before disgorgement. This extraordinarily long yeast ageing gives Imperial its characteristic calm, depth and complexity.
Food Pairing Suggestions
Ideal with oysters and raw shellfish, scallops with herb butter, fine sushi or light vegetable risottos. Also a delight as an elegant aperitif with salted biscuits and Manchego.
Special Features
The Gramona Imperial is the heart of the house – a Cava that places consistency above trends. The 50 months on the lees is not a marketing promise, but lived philosophy: patience as a hallmark of quality. The 2019 vintage, shaped by a cool, even growing season following a dry spring, delivers the necessary freshness and structure for this extended ageing.
