- The nose opens with a dry, almost meditative character: dried wildflower meadows, straw and Mediterranean herbs – chervil, marjoram, tarragon, sage. Beneath this, a precise, structuring salinity that recalls sea air and limestone. Pale fruit – green pear, white peach – swings elegantly alongside, flanked by citrus zest from kaffir lime and bergamot. The yeast presents itself classically and grounded: salted biscuits, fresh yeast – present, but never intrusive.
