Rosé is Champagne’s most expressive colour

Rosé Champagne is usually made by assemblage, adding a little still red wine to the pale cuvée; rarer and more powerful is the saignée method, in which black grapes macerate briefly on their skins. The colour ranges from onion skin to raspberry red, and red berries dominate the nose. Pinot Noir gives depth, Chardonnay coolness.

The rosés at Living Wines are without exception grower Champagnes from organic or biodynamic viticulture. One focus is the Côte des Bar, where Pinot Noir on limestone develops juiciness and spice, as Domaine de Bichery shows. Served at ten to twelve degrees, these Champagnes accompany salmon and duck as reliably as strawberries.
