Wine Description for Brut Nature Sans Ajout de Soufre by Drappier

Colour & Appearance
Pale straw-coloured with lively, fine mousse. The perlage displays vitality and precision.
Nose
Remarkably open and inviting for a sulphur-free Champagne. The bouquet unfolds ripe golden apples, pears and quinces, complemented by a fascinating complexity of lanolin, apple skin and roasted almonds. Subtle notes of smoke, a slightly iodine-tinged minerality and hints of cherry and peach round out the aromatic profile.
Palate
Juicy, generous and characterised by tender fruitiness. The Champagne displays aromatic richness with cellar apple and apple cake, interwoven with slightly oxidative elements that lend depth without dominating. The silky texture is structured by precise, lively acidity, complemented by waxy notes and a subtle zestiness. The balance between fruit and complexity is convincing.
Finish
Fresh and generous with good length. Pepper and mandarin provide spicy and fruity accents in the finale.
Grape Variety & Vinification
Pure Pinot Noir, exclusively from the first pressing (Cuvée). Mechanical pressing with low pressure, must flow by gravity. Two-week fermentation in stainless steel at low temperature, complete malolactic fermentation. Radically natural winemaking: no cold stabilisation, no filtration, no sulphuring. Approximately three years on the lees – a bold, purist approach that gives the wine its distinctive personality.
Food Pairing Suggestions
Pairs excellently with roasted monkfish, scallops, calf’s sweetbreads or Comté. Also a fascinating companion to apple tart or almond tart.
