Tasting note
Colour & appearance
An intense salmon pink that evokes the evening light on old limestone. The mousse is fine and lively, rising persistently and bearing witness to the long ageing on the lees.
Nose
The bouquet offers aromas of amarena cherry and pomegranate, of pomelo and grapefruit – a rare combination of ripe red fruit and citrus freshness. Beneath these mingle cellar apple and barberry, a hint of patisserie and the spicy depth of quatre épices. It is an aroma that feels both cool and opulent, like an orchard in autumn.
Palate
On the palate, the full power of the Pinot Noir from Verzenay reveals itself: berry-driven, juicy, with a silky texture derived from its time in wooden casks, without the wood ever becoming loud. The red fruit remains present, yet is carried by a fine minerality – notes of stone and undergrowth, along with some baked goods and nuts. The wine has drive but is never heavy; it possesses the energy of a great vintage and the coolness of the chalk.
Finish
The finish is long and precise, shaped by a saline freshness and the echo of red berries. Without any dosage, the wine comes across as straightforward, almost ascetic, yet the fruit carries it effortlessly. A finale that tastes of red wine cream and zest.
Terroir & origin
The grapes come from plots in Verzenay, one of the great villages of the Montagne de Reims, as well as from plots in Chamery, the home village of the Bonnet family. The vines are rooted in gravelly, calcareous sands over solid limestone – a subsoil that lends the Pinot Noir its typical structure and depth. The average age of the vines is 55 years; they were propagated by sélection massale, which preserves the genetic diversity of the vineyard.
Grape variety & vinification
A Rosé de Noirs made from 100 per cent Pinot Noir, to which a small proportion of red Coteaux Champenois was added. The base wine comes from the Cœur de Cuvée, was pressed for four hours and spontaneously fermented. It matured for nine months in barriques, underwent malolactic fermentation and was not filtered. Total sulphur is below 35 mg/l. Disgorged in September 2025, without dosage – an Extra Brut in the most radical sense.
Food recommendations
A Champagne that holds its own at the table: with cured salmon alongside dill and mustard sauce, with duck breast with cherries, or with tuna tataki with sesame. Mushroom risotto or a mature Comté also find an equal partner in it.
Special features
The Jules Bonnet cuvée commemorates Jules Bonnet, who founded the family’s viticulture in Chamery together with his father Grégoire in 1862. Since 2016, the estate has been certified organic; in the cellar, Cyril relies on spontaneous fermentation, minimal sulphur and zero dosage. This rosé shows just how clear and profound Champagne can be when nothing is added and nothing taken away.
