Colour & Appearance
Luminous, transparent-looking cherry red with youthful brilliance – a Pinot Noir that reveals its origin and craftsmanship in the glass.
Nose
Initially showing a fine reduction reminiscent of the Burgundian school. Beneath unfold dark cherries and plums of crisp precision, accompanied by rose petals, damp earth, root vegetables and a hint of white pepper. A nose that combines depth with elegance.
Palate
The wine presents itself finely juicy and concentrated, with remarkable inner calm. The dark fruit is carried by earthy and stony notes that clearly express the limestone-silex terroir. The acidity gains agility and presence with every second, whilst a dense, extract-rich core and grippy yet ripe tannin lend the wine structure. Power and concentration alongside clarity and precision – an impressive balance.
Finish
Long, mineral and characterised by persistent spice. The earthy notes linger, underscored by a fine fruitiness and the characteristic tension of the terroir.
Terroir & Origin
From the single vineyard Grand Picou in Saint-Agnan, Vallée de la Marne. The vineyard, planted in 1982 by grandmother Suzanne Boiselle with massal selection, lies at 180 metres altitude, with a 12% south-facing slope. The soil of limestone and silex from the Bartonian decisively shapes the character of this wine.
Grape Variety & Vinification
100% Pinot Noir, destemmed and spontaneously fermented. 15 days maceration in tank with gentle submersion of the cap. Maturation for 20 months in Burgundian oak barrels on fine lees. Bottled by hand without fining on 16 July 2021. Only 1,071 bottles produced.
Food Pairing Suggestions
Pairs beautifully with braised game birds, coq au vin, beef fillet with truffle, aged Comté or Brie de Meaux. Also an excellent choice with mushroom dishes and duck à l’orange.
