Bottler and ingredients

Bottler: Champagne Domaine de Bichery, 92 Grande Rue, 10250 Neuville sur Seine / France

In the glass

  1. Colour

Bright, transparent cherry red with a fine, lively mousse.

  2. Nose

Captivating notes of sweet cherries, raspberries and grapefruit, accompanied by red apples, peach and delicate hints of praline and warm pastry.

  3. Palate

A fresh, juicy entry with vibrant energy, becoming increasingly vinous with a silky texture and elegant mousse. Fine tannins, pleasant spice and deep fruit ranging from red berries to citrus, finishing with a subtle salinity.

  4. Character

A powerful yet finely structured rosé Champagne that stands beautifully on its own despite the saignée component, impressing with its tension between freshness and depth.

  5. Pairing

Pairs wonderfully with grilled salmon, duck breast with red fruits or a spiced charcuterie board.

  6. Notes

Brut Nature with no dosage whatsoever, spontaneous fermentation with wild yeasts and maturation in Burgundian pièces. The estate has been Ecocert-certified since 2019 and, with a maximum of 12,500 bottles annually, ranks among the smallest producers in Champagne.

Tasting note

Colour & appearance
A bright, transparent cherry red that appears deep in the glass, threaded with a lively, fine mousse – precise and inviting at once.
Nose
Captivating and complex: morello cherries and raspberries meet grapefruit, red apples and peach. Beneath lie warm notes of praline and puff pastry, lending this rosé an almost Burgundian depth.
Palate
The attack is fresh, juicy and intense, then the true strength of this Champagne reveals itself: it becomes more vinous, silkier, whilst the mousse remains elegant. A very fine tannin structure supports the deep fruit – red berries alongside citrus – complemented by a pleasant spiciness. Not a heavy Saignée rosé, but a wine with drive and precision.
Finish
Long and precise, with a subtle salinity that cleanses the palate and allows the impression of chalk and fruit to linger long after.
Terroir & origin
From the Lieu-dit Bichery in Neuville-sur-Seine, in the heart of the Côte des Bar – that southern part of Champagne which long stood in the shadow of the Montagne de Reims. Here the vines grow on chalk-rich soils above the meandering Seine, in a region that pioneers such as Olivier Horiot have led to new heights.
Grape variety & vinification
Pure Pinot Noir from the 2022 vintage, crafted as a blend of white-pressed Pinot Noir and Saignée. The base wine was fermented around 60% in Burgundian pièces and 40% in stainless steel. In February 2025 it was disgorged with 0 grams dosage – a Brut Nature without any adjustment.
Food recommendations
Despite its Saignée component, this rosé drinks beautifully on its own, yet it shows its full class at the table: with pan-fried duck breast, salmon tartare or raw tuna. Also an exciting match with charcuterie or a well-aged Comté.
Special features
Raphaël Piconnet and Hannah have been making wine on their family estate since 2015 – certified organic (Ecocert), with wild yeasts, without fining or filtration. Each of the eight hectares tells its own story. This rosé showcases Pinot Noir in its finest form: not as a heavy Saignée wine, but as a precise, saline Champagne that places origin above style.
