In the glass

  1. Colour

Bright, transparent cherry red with a lively mousse.

  2. Nose

An enticing bouquet of crunchy sweet cherries, raspberries and grapefruit, accompanied by red apples, peach, praline and warm puff pastry.

  3. Palate

A fresh, juicy attack with vibrant intensity, becoming more vinous with a silky texture and elegant mousse; fine tannins, pleasant spice, deep fruit ranging from red berries to citrus, and a slight salinity on the finish.

  4. Character

Typical Bichery style: pure, precise and expressive – a Champagne that delights on its own despite the saignée component, whilst also shining as a versatile food pairing partner.

  5. Pairing

Grilled salmon with herb butter, duck breast with cherry jus, mature Comté.

  6. Notes

A blend of white-pressed Pinot Noir and saignée juice; fermentation approximately 60% in cask and 40% in stainless steel, maturation in Burgundian pièces; Brut Nature with no dosage, spontaneous fermentation with wild yeasts, unfined and unfiltered, Ecocert-certified since 2019.

Tasting note

Colour & appearance
Bright, transparent cherry red with a fine, lively mousse – a rosé of almost ethereal clarity.
Nose
Captivating and complex: morello cherries, raspberries and grapefruit meet red apples and peach. Beneath lie notes of praline and warm puff pastry – an aroma that shifts between fruit and brioche.
Palate
Fresh, juicy and powerful on the attack – then the wine turns silky, the mousse becomes fine and the texture vinous. Red fruit and citrus meld with a refined tannin structure, pleasant spice and depth. A rosé with substance that, despite its power, never feels heavy.
Finish
Long and precise, with a subtle salinity on the finish that cleanses the palate and maintains tension.
Terroir & origin
From the limestone-rich slopes of the Côte des Bar, that southern Champagne region long overshadowed by the Montagne de Reims. Raphaël Piconnet and Hannah farm eight hectares in Neuville-sur-Seine and Gyé-sur-Seine – each parcel tells its own story. Ecocert-certified since 2019.
Grape variety & vinification
Pure Pinot Noir, a blend of white-pressed juice and saignée. Around 60% of the base wine was fermented in Burgundian pièces, 40% in stainless steel. Disgorged in February 2025 with 0 grams dosage – Brut Nature in its purest sense.
Food recommendations
A rosé that stands beautifully on its own yet reveals its full stature at the table: with grilled salmon, duck breast with cherries, raw tuna or Comté. Also a revelation alongside tomato and mozzarella with fresh basil.
Special features
The magnum format lends this Champagne additional freshness and ageing potential. A wine that proves rosé Champagne can be more than just an aperitif – it can convey serious terroir.
