- Colour & Appearance
- Luminous straw yellow with golden reflections, threaded through with a fine, persistent perlage that reveals the extended time spent on the lees. Presented with particular elegance in magnum format.
- Nose
- Complex, multi-layered bouquet of impressive intensity. Ripe apples and citrus fruits dominate initially, before the characteristic signs of maturation emerge: brioche, roasted hazelnuts, smoky notes and a subtle yeastiness. The biodynamic provenance manifests itself in a remarkable freshness and clarity of aromas.
- Palate
- Silky-smooth texture with creamy mousse that never feels heavy-handed. The attack surprises with lively freshness – apple tart and ripe citrus notes meet a precise minerality. Full-bodied and mouth-filling, yet threaded through with a taut acidity structure that guarantees tension and drinking flow. The oxidative dosage from the Solera system lends the wine an additional layer of complexity without being intrusive.
- Finish
- Long, complex and marked by distinctive character. The 50+ months on the lees leave their mark in the form of brioche and almonds, whilst the saline minerality remains present right through to the end.
- Terroir & Origin
- From various biodynamic vineyards in Penedès, Demeter-certified. The autochthonous grape varieties Xarel·lo, Macabeo and Parellada plus a touch of Chardonnay reflect the Mediterranean terroir with its chalky soils.
- Grape Variety & Vinification
- Traditional bottle fermentation with a minimum of 50 months on the lees. The special feature: the dosage comes from a Solera-like system that has been maintained since 1910 – a technique from Sherry production that gives Imperial its unique complexity. At 6 g/l in the low Brut range.
- Food Pairing Recommendations
- Excellent with roasted turbot, scallops with truffle, langoustines or creamy risotto. Also an excellent choice with mature Manchego or Comté. The magnum bottle makes it ideal for festive occasions.
