Wine Description for Imperial Brut 2018 1500ml Magnum by Gramona
- Colour & Appearance
- Luminous straw yellow with golden reflections. The fine, persistent mousse bears witness to the extended maturation on the lees – a visual foretaste of the complexity to come.
- Nose
- Impressively multi-layered: ripe apples and citrus fruits form the fruity foundation, over which the traces of over 50 months of yeast ageing layer themselves with toasted notes, smoky accents and fine brioche. The nose combines freshness with depth – intense, harmonious and of remarkable individuality.
- Palate
- Silky-creamy texture with lively freshness on the attack. Ripe fruits and apple tart dominate initially, then a full-bodied, mouth-filling structure unfolds, yet never feels heavy. Instead: juicy tension and taut elegance that guide the wine through the mouth with beautiful precision.
- Finish
- Long, complex and of pronounced character. The oxidative dosage from the Solera system lends the finale additional depth and a fascinating multi-layered quality that resonates for minutes afterwards.
- Terroir & Origin
- A cuvée from various vineyard sites in Penedès, all managed according to Demeter-certified biodynamic principles. Gramona belongs to the exclusive association Corpinnat – a group of winemakers standing for the highest quality standards beyond standard Cava regulations.
- Grape Variety & Vinification
- Classic cuvée from the autochthonous varieties Xarel·lo, Macabeo and Parellada plus a small proportion of Chardonnay. Traditional bottle fermentation with a minimum of 50 months on the lees. The special feature: the dosage comes from a Solera-like system maintained since 1910 – oxidative wines with remnants of very old vintages, as one knows from Jerez. At 6 g/l in the low Brut range.
- Food Pairing Recommendations
- A sparkling wine for the table: oysters, pan-fried scallops, lobster with butter, sweetbreads, creamy risottos or mature Manchego. The magnum bottle predestines it for festive occasions.
- Special Features
- A Cava classic that has set standards for generations. The unique Solera dosage and the uncompromising biodynamic working methods make the Imperial a sparkling wine of world-class calibre.
