Wine Description for Imperial Brut 2018 by Gramona

Colour & Appearance
Luminous straw yellow with fine, persistent bubbles that bear witness to the extended ageing on the lees. The mousse is creamy and elegant.
Nose
Multi-layered and intense: ripe apples and citrus fruits meet yeasty roasting notes, brioche and subtle smoky undertones. The freshness remains remarkably present despite the complexity – a sign of perfectly balanced maturity.
Palate
Silky and creamy on the palate, yet surprisingly taut and juicy. The entry displays lively freshness with apple tart and ripe fruits. Full-bodied, but never heavy – the Imperial possesses that rare elegance that distinguishes great sparkling wines. The fine bubbles carry the aromas to every corner of the palate.
Finish
Long, complex and characterful. The oxidative dosage from the Solera system lends the finale an additional depth dimension that recalls great Champagnes.
Terroir & Origin
The grapes come from various biodynamically managed vineyards in Penedès, Demeter-certified. Gramona is part of the exclusive Corpinnat association – a collective of winemakers pursuing the highest quality standards beyond the Cava DO.
Grape Variety & Vinification
Classic cuvée of Xarel·lo, Macabeo and Parellada with a touch of Chardonnay. Traditional bottle fermentation with a minimum of 50 months on the lees, often considerably longer. The unique dosage comes from a Solera system maintained since 1910 – oxidatively aged wines that give the Imperial its distinctive depth. With 6 g/l residual sugar in the lower Brut range.
Food Pairing Suggestions
Excellent with roasted monkfish, scallops or guinea fowl with mushrooms. The complexity harmonises beautifully with aged Manchego or Comté. Also a pleasure on its own – as an aperitif it shows its full class.
Special Features
A Cava that demonstrates Spanish sparkling wine can play on equal terms with great Champagnes. The historic Solera dosage makes the Imperial a unique creation with an unmistakable signature.
