Gramona is among the pioneers of quality-focused Cava and demonstrates impressively with the Enoteca Brut Nature that Spanish sparkling wine can be far more than an inexpensive Prosecco substitute. The Brut Nature expression forgoes dosage entirely, lending the wine an uncompromising purity and directness. The 2012 vintage has already had over a decade to mature – a test of patience that pays dividends in complexity and depth.
Terroir & Origin
The Penedès region south-west of Barcelona offers ideal conditions for traditional Catalan grape varieties with its chalky soils and Mediterranean climate with continental influences. Gramona manages its vineyards in Sant Sadurní d’Anoia, the historic heart of Cava production. The higher-altitude vineyard sites provide cool nights that give the grapes that freshness and acidity structure essential for long-lived sparkling wines.
Grape Variety & Vinification
Xarel·lo forms the backbone of this cuvée, bringing structure, mineral notes and ageing potential. Macabeo (also called Viura) contributes elegance and floral aromas. Gramona practises biodynamic viticulture and relies on extended yeast ageing using the traditional method – a minimum of 36 months, often considerably longer. The moderate alcohol content of 12% underscores the philosophy of finesse over power. Without additional dosage, the wine’s true personality reveals itself: clear, precise, unadorned.
Food Pairing Suggestions
The saline minerality and bone-dry execution make this Cava an ideal companion for seafood, particularly oysters, scallops or gambas al ajillo. It also harmonises beautifully with Jamón Ibérico, Manchego and other Spanish tapas. The maturity of the vintage also allows for more demanding pairings such as pan-fried turbot or mushroom risotto.
