In the glass
Colour
Pale golden yellow with delicate reddish reflections and a lively, creamy mousse.
Nose
Refined and bright-fruited with apple peel, rosehip and whitecurrant, complemented by dried Mediterranean herbs, chopped almond, green olive and a hint of fennel seed – composed, precise and never ostentatious.
Palate
More generous than expected, with wild raspberry, red apple and redcurrant, underpinned by a distinct yet pleasant bitterness reminiscent of fresh apple peel; saline minerality and a stony structure provide freshness and drinkability.
Character
Cool, chalky and remarkably elegant – a rosé sparkling wine with depth that reveals the stony side of Pinot Noir, captivating with savoury spice and a fine creaminess derived from lees ageing.
Pairing
Grilled octopus with fennel salad, tapas with Serrano ham and almonds, goat’s cheese with dried herbs.
Notes
An unusually refined, cool aromatic profile for a rosé Cava – less red fruit, more chalk and stone; the 28-month lees ageing lends a creamy density without sacrificing freshness. From Gramona, pioneers of biodynamic Cava production since 2000.
Tasting note
Colour & appearance
Pale golden yellow with delicate reddish reflections and a lively, creamy mousse which, thanks to 28 months on the lees, develops a dense, almost frothy presence in the glass.
Nose
Remarkably fine and bright-fruited for a rosé sparkling wine. Less overtly red-fruited, it is instead shaped by the cool, calcareous side of Pinot Noir: apple skin, rosehip and pickled white currants, while raspberry and cherry remain merely hinted at. Over this lies a Mediterranean aromatic profile of dried herbs, chopped almond, a touch of green olive, as well as fennel seed and coriander seed. Everything feels enormously precise and serene, never loud.
Palate
Noticeably more generous and voluminous than the nose suggests. The red fruit opens up with wild raspberry, red apple and currant, while that pleasant, almost nostalgic bitterness of apple skin remains ever-present. Behind this, salty minerality and a fine stony structure feel both refreshing and invigorating.
Finish
Bright, cool and chalky, with a beautiful balance between tension, freshness and savoury spice.
Terroir & origin
From the calcareous soils of Sant Sadurní d’Anoia in the Penedès, where the Batlle i Gramona family has cultivated vines since 1850. The soils, marked by limestone and fossil deposits, lend the wine its cool, stony character.
Grape variety & vinification
Pure Pinot Noir, vinified using traditional bottle fermentation (Méthode champenoise) with 28 months of lees ageing in the underground cellar. As a Brut Nature, it receives no dosage, underscoring its dry, chalky clarity.
Food recommendations
The salty minerality and fine bitterness of apple skin make it an ideal match for grilled sardines with lemon, Jamón Ibérico or pan-fried prawns with garlic. Also an excellent choice with smoked salmon or a seafood paella.
Special features
The Demeter logo on the label indicates biodynamic farming, which Gramona has practised rigorously since the turn of the millennium. As a pure Pinot Noir rosé from the Penedès, it reveals an unusually cool, chalky side of the variety – far removed from opulent fruit, yet displaying that precise, almost meditative structure that sets Gramona apart from other Cava producers.
