Wine Description for Cottá Barbaresco DOCG 2021 by Sottimano
- Colour & Appearance
- Luminous cherry red with bright reflections and russet accents – a classic Nebbiolo hue that unites youthfulness and elegance.
- Nose
- Fascinatingly complex and dual-natured: on one hand wild strawberry, raspberry, rosehip and cranberry, supported by rooibos tea and red pepper. On the other, earthy, distinctive notes of undergrowth, forest floor and ethereal pine needles. Cedarwood, cigar box and light tobacco leaves lend balsamic depth, whilst rosemary, thyme and juniper bring Mediterranean freshness. With air contact, freshly chopped hazelnuts and a promising chalky minerality unfold.
- Palate
- From the first moment, this Barbaresco combines elegance with structure. The warm, silky fruit of rosehip, rooibos and wild strawberry meets taut, almost chewable tannins that subtly line the mouth. Hazelnut and walnut merge with pleasant bitterness into a harmonious symbiosis. The youthfully vibrant acidity provides vertical drive and cooling minerality that runs through the entire length.
- Finish
- Long and spicy with present tannin structure. The Mediterranean herbal notes and nutty aromas linger sustainably, leaving a distinctive, slightly balsamic impression.
- Terroir & Origin
- The Cottá vineyard site in Neive has been farmed organically by Sottimano since the 1970s. With an average yield of just 15 hl/ha, concentrated, terroir-driven wines of exceptional quality are produced.
- Grape Variety & Vinification
- 100% Nebbiolo, destemmed and fermented on the skins for up to 60 days in open stainless steel fermentation vessels with regular punch-downs of the cap. Aged since 2020 in large, slightly conical botti for approximately 24 months – a traditional approach that perfectly balances fruit and structure.
- Food Pairing Recommendations
- Rosy roasted venison loin under an herb crust with savoy cabbage, ravioli with mushrooms and white tomato foam with toasted hazelnuts, braised oxtail on pearl barley with red wine onions.
- Special Characteristics
- A Barbaresco that stages youthful stubbornness as charming attitude whilst combining a gastronomically attractive drinking window with impressive ageing potential. The characteristic Sottimano bite makes it already accessible now, without squandering its development potential.
