Colour & Appearance
Luminous, vibrant straw yellow with fine amber reflexes – a hint of minimal sulphiting and extended ageing on lees.
Nose
Fascinatingly unconventional, this Zen Chardonnay presents itself: fully ripe pears and soft yellow apples with subtly oxidative nuances meet a spicy aromatics of mace, pale tobacco and acacia honey. The deliberately low sulphiting allows the wine to breathe and appear vibrant – nothing for purists seeking flawless fruit lustre, but a feast for lovers of authentic natural wines.
Palate
Gripping and powerful on the attack, with a remarkable phenolic structure that lends this Chardonnay an almost red wine character. The grippy tannins define herbaceous and precise, whilst the spice takes the lead. The fruit acts subtly in the background, the ripe acidity remaining elegantly restrained. A wine that lives in the glass and evolves – each minute brings new facets.
Finish
Medium to long, spicy-herbaceous with fine bitterness and a hint of roasted nuts. The phenolics carry through to the end.
Terroir & Origin
From a small 0.69 hectare parcel in Pouilly-Vinzelles at approximately 250 metres altitude. The red clay and limestone impart mineral tension and structural complexity to the wine.
Grape Variety & Vinification
100% Chardonnay, farmed biodynamically. Whole bunch pressing, spontaneous fermentation and approximately 17 months ageing on lees. No added sulphur during ageing and fermentation, only minimal dosage at unfiltered bottling. An uncompromising natural wine approach.
Food Pairing Suggestions
This characterful Chardonnay demands equally powerful partners: roasted turbot, calf’s sweetbreads in butter, morels in cream sauce, aged Comté or Poulet de Bresse with mushrooms. Also an exciting choice with roasted pork or poultry terrine.
