Wine Description for “La Carbonnode” Zen VdF 2023 by La Soufrandière

Colour & Appearance
Powerful, deep straw yellow with warm apricot reflections – the appearance alone announces a wine of distinctive character.
Nose
The nose is a kaleidoscope: light tobacco and pickled ginger interweave with fine wood notes, whilst bitter orange, bergamot and dried orange peel float above. Rosy-cheeked stone fruit joins in – medlars, waxy apples – as well as genuine honeycomb. With air, the bouquet unfolds in constant, pleasant movement.
Palate
The palate surprises with an almost tannic texture reminiscent of long-steeped Darjeeling tea – aromatically stimulating and herbal, with moderate acidity that nonetheless conveys clear, distinctive freshness. The nose’s aromatics continue seamlessly, dominated by a pronounced orange note, flanked by tobacco, mace and mild spices.
Finish
Long and sweeping, cool and spicy – a sublime coolness runs through the aftertaste and leaves a contemplative, dry conclusion of considerable length.
Grape Variety & Vinification
Chardonnay from the single parcel La Bonnode, vinified using the carbonic maceration method: whole grapes fermented over approximately nine days under carbon dioxide, followed by gentle pressing and spontaneous fermentation in used 228-litre Burgundy barrels. No sulphur during fermentation and ageing; only a minimal dosage of 24 mg/l SO₂ at unfiltered bottling. Alcohol: 13.0% vol.
Special Features
A rarity limited to 1,780 bottles – a conceptually bold Chardonnay that redefines the boundaries of Burgundy. Carbonic fermentation of a white Burgundy grape is a rarity and lends this wine its unmistakable, almost red-wine-like structure. An exciting discovery for the curious and connoisseurs alike.
