Tasting note
Colour & appearance
Pale golden yellow with a clear, vibrant reflection – a wine that hints at its cool origins in the limestone-rich Mâconnais even in the glass.
Nose
A taut Burgundy that masters the balance between yellow-fleshed richness and cool tension. Citrus fruits and yellow plums meet floral notes of chamomile and almond blossom, underpinned by fine stony spice and a hint of pencil lead – an aromatic profile reminiscent of polished limestone.
Palate
On the palate, an impressive herbal and stony spice dominates amidst succulent fruit. The citrus acidity typical of 2021 provides drive and a pleasant, piquant sharpness, while lemon zest contributes a tart, fresh depth. The saline component emerges particularly on the finish, lending the wine a vigorous, almost electrifying pull.
Finish
Long and precise, marked by salty minerality and a persistent citrus freshness that cleanses the palate and calls for savoury pastries or seafood.
Terroir & origin
The vineyard site Les Quarts ranks among the finest terroirs of the Pouilly-Vinzelles appellation in southern Burgundy. This east-facing vineyard rests on iron-rich clay and Jurassic limestone soils interspersed with pebbles. Here, 48- to 80-year-old Chardonnay vines are rooted, some of which are still worked by horse – a slope that has been certified biodynamic since 2006 and perfectly reflects the Bret brothers’ philosophy of living, expressive wines.
Grape variety & vinification
Pure Chardonnay, hand-harvested between 18 and 23 September. Following whole-bunch pressing, spontaneous fermentation took place with natural yeasts. The wine matured for 17 months in used barrels and neutral vats, underwent full malolactic fermentation and received only minimal sulphur addition before bottling (29 mg/l total sulphur). The result: a wine of remarkable purity and texture.
Food recommendations
The citrus sharpness and saline structure of this wine find ideal partners in lemon chicken with fennel, sea bass cheeks with cauliflower-cardamom cream or a crispy chicken salad with Thai basil, coriander and sesame oil. It also reveals its full tension alongside grilled sole fillet or young Comté.
Special features
This wine bears the Demeter seal for biodynamic cultivation and comes from one of the estate’s most historically significant plots. The magnum bottle (1500 ml) guarantees particularly slow, harmonious maturation. The low pH of 3.22 and the cool acid structure of the 2021 vintage promise enormous development potential over the next decade.
