- Generously and seductively ripe, this Pouilly-Fuissé presents itself with confidence. Yellow apples, juicy pears and quince dominate the aromatic spectrum with crumbly, fully ripe fruit. Beneath these unfold fine herbal nuances of chervil and sage, complemented by the oriental spice of dukkah. Unroasted hazelnuts and buttery toast lend the bouquet depth and complexity – a classic Burgundian Chardonnay with a modern edge.

- The attack reveals itself as harmonious and elegantly refined, the texture silky and seductive. To the ripe fruitiness are added caramel notes, fleur de sel and dark roasted toast with raw milk butter. A creamy, almost opulent structure is carried by clear minerality and dense extract. Remarkable is the considerable grip on the palate, which lends the wine tension without compromising its smoothness.

- Long, fruity and with bitter framing that gives the wine definition. The minerality remains present, the fruit fades with persistence – a finale with both impact and elegance.
- Terroir & Origin
- The small vineyard site En Carementrant lies at the foot of the imposing Roche de Vergisson at approximately 350 metres elevation. The southerly aspect and the limestone and clay-rich soils impart the wine’s characteristic minerality and depth. Old vines from the 1950s and 1960s yield concentrated, characterful grapes.
- Grape Variety & Vinification
- Chardonnay in pure form, farmed biodynamically. Hand-harvested, whole-bunch pressing and spontaneous fermentation with natural yeasts. Maturation proceeds classically on the fine lees in stainless steel tanks and used wooden barrels – a purist approach with restrained sulphur additions that affords maximum expression to the terroir.

- This powerful Chardonnay demands sophisticated companions: lobster in saffron sauce, seared scallops, calf’s sweetbreads or Coq au Vin Jaune. Also an excellent choice with aged Comté or Beaufort d’Alpage.
