Colour & Appearance
Sparkling medium golden yellow with green reflections, indicating the youthful freshness of this Chardonnay.
Nose
Impressively chalky and cool on first impression – this wine needs air to unfold its full potential. After decanting, a multi-layered aromatic play emerges: apple and pear meet cucumber, complemented by notes of dry biscuit and anise. The barrel ageing remains subtly in the background – a sign of craftsmanship.
Palate
Youthful, taut and refreshing. The invigorating acidity forms the backbone, whilst bright fruit and saline minerality provide tension. A subtle tannin lends additional structure. The wine feels mouth-watering and practically demands the right culinary partner.
Finish
Clear, mineral and persistently fresh with a fine saline echo that invites the next sip.
Terroir & Origin
The „Les Perches“ parcel lies in the village of Verzé at 230 metres elevation over Jurassic limestone – that Burgundian terroir which gives Chardonnay its characteristic tension. The 40 to 50-year-old vines bring the necessary depth and concentration.
Grape Variety & Vinification
100% Chardonnay, hand-harvested on 19 September 2024. Spontaneous fermentation with wild yeasts in barrel, unfiltered, with minimal sulphur use. Only 3,240 bottles were produced – a wine that perfectly combines purism and terroir expression.
Food Pairing Suggestions
This wine seeks dishes with similar structure: scallops with lemon butter, pan-fried turbot, calf’s sweetbread with morels or medium-aged goat’s cheese. Also an excellent choice with sushi or raw fish.
Special Features
