Character
This Chablis Premier Cru from the renowned vineyard site La Fourchaume embodies the classic minerality and precision for which Burgundy’s northernmost wine region is famous. The La Fourchaume site, one of the largest Premier Cru parcels on the right bank of the Serein, yields wines of remarkable concentration and structure, whilst retaining the characteristic freshness and tension of Chablis. The 2023 vintage promises the typical vibrancy with good ripeness.
Terroir & Origin
Domaine de l’Enclos manages parcels on the famous Kimmeridge limestone soil, that fossil marine rock which gives Chablis its distinctive mineral character. La Fourchaume benefits from a gentle south-westerly aspect, which ensures optimal ripening conditions whilst preserving the acidity structure. The cool continental climate with its cold winters and warm summers imparts the wines with a distinctive tension between ripeness and freshness.
Grape Variety & Vinification
Pure Chardonnay in its most purist form – either unoaked or with only restrained oak usage, so as not to mask the terroir typicity. Vinification in Chablis traditionally follows the principle of reduction: the aim is to let the terroir speak. The Premier Cru status permits more intensive extraction and longer lees ageing than basic Chablis, which gives the wine greater depth, texture and ageing potential, without compromising its characteristic directness.
Food Pairing Recommendations
A classic companion to seafood, particularly oysters, scallops and langoustines. The mineral structure harmonises beautifully with grilled white fish, pike-perch or turbot in butter sauce.
