Tasting note

Character
A seamlessly structured, cool white wine that impressively reflects the puristic philosophy of Athénais de Béru. On the palate, it exhibits a crystalline purity, sustained by a gripping mineral tension and a refined, saline freshness that drives the drinkability.
Terroir & Origin
The grapes originate from the high elevations of eastern Chablis in Burgundy, where the vines take root at around 300 metres above sea level. This site is defined by fossil-rich Kimmeridgian limestone – a 150-million-year-old seabed consisting of calcareous sedimentary layers and prehistoric oyster shells. The gentle, biodynamic farming without heavy machinery promotes ecological balance and allows the vines to establish deep contact with the subsoil.
Grape Variety & Vinification
Crafted from the Chardonnay grape variety, this wine stands for natural cellar work with minimal intervention. Spontaneous fermentation using wild yeasts preserves the unique profile of the vineyard. The ageing emphasizes unadulterated provenance, dispensing with dominant oak nuances to leave the cool mineral structure untouched.
Food Pairings
This Chablis demonstrates its strengths when paired with classic seafood cuisine. It pairs brilliantly with fresh oysters, pan-seared scallops or delicate turbot in lemon butter. It is equally recommended alongside creamy Apostel cheese or a succulent Poulet de Bresse.
