Between the Serra de Tramuntana in the north-west and the hills of the east coast, a vast plain of reddish, limestone-rich soil stretches through the interior of Mallorca, where almond trees, carob trees and vines have grown side by side for centuries. This is home to the island’s old grape varieties Callet, Manto Negro and Prensal Blanc, which yield pale, herb-spiced red wines and saline, fresh white wines. If you are looking for organic wine from Mallorca, you will find the wines of Mesquida Mora from Porreres here, an estate that cultivates its vines biodynamically. Among them is Acrollam, whose name is nothing other than Mallorca read backwards.

More about Mallorca
Wines from Mallorca: from the Tramuntana to the plains of the Pla
Mallorca’s viticulture is largely concentrated in the island’s interior. The Serra de Tramuntana keeps out the cold north winds in winter, while in summer the sea breeze brings coolness to the vineyards in the evenings, and the dryness of the months before the harvest keeps the grapes healthy. Two designations of origin structure the island: D.O. Binissalem at the foot of the Tramuntana, where Manto Negro is the most important red variety, and D.O. Pla i Llevant on the plain and in the east. Many winemakers also bottle their wines as Vi de la Terra Mallorca in order to work more freely with varieties and blends. The soils are rich in limestone, often with red clay, the Call vermell, which stores water and carries the vines through the dry summers.
Callet, Prensal and Giró: the island’s old grape varieties
Callet is the red variety that makes Mallorca most distinctly recognisable: thin-skinned, light in colour, with fine tannins, red cherry, fennel and dried herbs. Manto Negro brings more body and ripe fruit. Among the white varieties, Prensal Blanc, also known as Moll, stands for wines with citrus, herbs and a slightly saline trace; Giró Ros lends fragrance and structure. Gorgollassa, a red variety with lively acidity, had almost disappeared, but some winemakers have replanted it in recent years.
Organic wine from Mallorca: Mesquida Mora in Porreres
In Porreres, right in the middle of the Pla, Bàrbara Mesquida runs the estate Mesquida Mora. She farms her vines biodynamically, keeps the soils alive with cover crops and harvests by hand. Her aim is wines that express the island with freshness and moderate alcohol. The Acrollam Blanc 2025 combines Prensal and Giró into an expressive white wine that reveals the herbal spice and saline freshness of these two island varieties. The two Sincronia wines are intended for everyday drinking: a white made from Prensal, Parellada and Chardonnay, and a red from Callet with Cabernet Franc and Merlot.
Natural wine from Mallorca: pure Callet and Gorgollassa
The estate’s signature shows most clearly in its single-varietal red wines. The Sòtil 2021 is a Callet from bush vines up to 61 years old, vinified in a natural wine style, light, floral and, at 12.5 per cent alcohol, easy enough for a long evening. The Gorgollassa d'es Monjos 2019 gives this rare island variety a juicy, finely structured form with cherry and spice. Both pair well with grilled fish, Tumbet or Sobrassada. You will find all available wines from Mallorca in the list above.
