Wine Description for Sòtil 2021 by Mesquida Mora

Colour & Appearance
Transparent, luminous cherry red with remarkable clarity – a wine that reveals its origins from old bush vines and biodynamic viticulture already in the glass.
Nose
Expressive and of striking purity. Intense floral notes meet a sweet cherry fruit that never turns jammy, but is characterised by elegant freshness. The bouquet displays that Mediterranean finesse one would hardly expect at 12.5% vol.
Palate
Here the true class of this Callet reveals itself: light to medium-bodied, with silky texture and soft tannins. Cherry, a hint of pepper and green capsicum lend complexity. The enormous acidity is the backbone – juicy, crisp, invigorating. With air contact, the wine increasingly develops grip and depth, yet never loses its slender elegance. Not a gram of unnecessary fruit sweetness, instead precisely drawn extract.
Finish
Crisp and refreshing, with a length that surprises. The wine immediately makes you want the next sip – the hallmark of a great, food-friendly wine.
Terroir & Origin
From 56 to 61-year-old bush vines on Mallorca. The autochthonous Callet variety is perfectly adapted to the Mediterranean climate and impressively demonstrates here that heat and aridity do not necessarily lead to high-alcohol, heavy wines.
Grape Variety & Vinification
100% Callet, biodynamically farmed by Barbara Mesquida Mora. Aged in 500-litre French oak barrels, which lend the wine structure without dominating it. A modern, sensitive interpretation of this Majorcan rarity.
Food Pairing Suggestions
Perfect with lamb cutlets with rosemary potatoes, spicy Pecorino, grilled vegetables or, lightly chilled, with Mediterranean tapas. A versatile companion that combines lightness with substance.
Special Features
Undoubtedly one of the finest Callets from Mallorca – a positive example of how the warm Mediterranean climate can produce sensual, elegant red wines. Full of finesse and contemporary drinking pleasure.
