Wine Description for Bianco Pomice IGP 2023 by Tenuta di Castellaro

Colour & Appearance
Pale golden yellow with delicate silvery reflections – a wine that already hints at its volcanic origins in the glass.
Nose
Fascinatingly complex: citrus fruits meet exotic notes of guava, pineapple and honeydew melon. These are joined by herbal, ethereal nuances and a salty sea breeze that becomes increasingly prominent over time – typical of the wind-swept Aeolian Islands.
Palate
Juicy, fresh and of remarkable substance. The minerality dominates here more distinctly than on the nose, accompanied by a fine, almost iodine-like salinity that recalls oyster shells. A subtle spice and the lively acidity make this wine a true food companion – complex, yet never obtrusive.
Finish
Medium length with persistent salty freshness and a hint of lemon zest and herbs. The volcanic minerality remains present and invites you to take another sip.
Terroir & Origin
The vineyards on Lipari, situated at 350 metres altitude, are characterised by volcanic sand and pumice stone (Italian: pómice) – an extreme terroir that gives this wine its characteristic minerality and salinity. Proximity to the sea and constant winds shape the character of this extraordinary white wine.
Grape Variety & Vinification
A thoughtfully crafted cuvée of 60% Malvasia delle Lipari and 40% Carricante. Direct pressing, eight hours of maceration and separate vinification: Malvasia in stainless steel for freshness, Carricante in used barrels with bâtonnage for texture and complexity. Six months of ageing bring both components harmoniously together.
Food Pairing Recommendations
Grilled swordfish, spaghetti alle vongole, oysters, scallops, fried squid, insalata di mare or classic fish carpaccio – this wine calls for Mediterranean seafood cuisine.
Special Features
An authentic island wine from the Aeolian Islands that perfectly unites volcanic terroir and maritime influences. Those seeking Sicilian white wines beyond the mainstream will find here a characterful, distinctive representative with genuine identity.
