The white soul of Mount Etna possesses a fascinating, almost archaic power: Carricante, which reaches its absolute peak on the dark volcanic soils of Sicily, produces wines of razor-sharp structure and vibrant acidity. Characterised by salty nuances, it evokes cool mountain herbs and wet stone, while developing a deep, smoky complexity with age. It is a grape variety that perfectly unites the cool mountain air and the intense southern sun in the glass.

Just how magnificently this variety matures as a monovarietal is demonstrated by the profound Etna classics from I Vigneri di Salvo Foti, such as the VignadiMilo, or the Aurora cuvée alongside the indigenous Minnella. That it also shines on wind-swept neighbouring islands is proven by Tenuta di Castellaro: in the Bianco Pomice, it combines with Malvasia to create an elegant coastal wine shaped by pumice soils.
