Colour & appearance
Intense salmon pink with striking orange reflections - a visual indication of the special style and the volcanic terroir.
Nose
Surprisingly ethereal and spicy at first. A Mediterranean herbal symphony unfolds: Rosemary, Thyme, Juniper, Tarragon and wild Sage. After decanting, the wine reveals its fruity facets - Vineyard peach, Orange, redcurrant, Wild raspberry and a fine Rhubarb flavour.
Palate
Powerful and complex in structure - not a light-footed aperitif rosé, but a serious wine with substance. The juicy fruit is flattering, but the spicy complexity dominates. The mineral tension of the volcanic terroir gives it depth and considerable ageing potential.
Departure
Long, spicy and lasting. The herbal notes linger and leave a lasting impression.
Terroir & origin
The vineyards on Lipari lie at an altitude of 350 metres above mineral-rich Volcanic sand - a terroir that gives the wine its characteristic minerality and complexity. The Aeolian Islands offer unique conditions for indigenous grape varieties.
Grape variety & vinification
Mainly Corinto Nero (also known as Korinthianki) with a small proportion of other indigenous Sicilian varieties such as Nero d'Avola. Direct pressing in a pneumatic press, fermentation in stainless steel, followed by a six-month Bâtonnage - This ageing on the lees gives the wine additional texture and complexity.
Food pairing suggestions
This sophisticated rosé demands intensive cooking: Grilled swordfish with herb crust, Lamb chops with rosemary oil, Aubergine caponata, Tuna Tataki with sesame seeds, or Provençal bouillabaisse. Also to savoury hard cheeses a discovery.
