Wine Description for Rosa Caolino IGT 2024 by Tenuta di Castellaro

Colour & Appearance
Luminous salmon pink with seductive orange reflections – a rosé that already hints at its volcanic origins in the glass.
Nose
The nose is complex and remarkably distinctive: rosemary, thyme and wild sage meld with a whisper of juniper and tarragon into an intoxicatingly Mediterranean herb bouquet. With a little air, a juicy fruit layer unfolds, revealing vineyard peach, orange, redcurrant and wild raspberry, underpinned by a delicate rhubarb note.
Palate
Powerful and yet remarkably precise: the palate displays a spicy intensity rarely expected from a rosé. The fruit is juicy and caressing, yet it is the complex structure – carried by volcanic minerality – that clearly sets this wine apart from the crowd.
Finish
Long, spicy and persistent. The lingering herbal finish stays in the memory and underscores the character of a rosé with genuine ageing potential.
Terroir & Origin
The vineyards of Tenuta di Castellaro are located on the Aeolian island of Lipari at approximately 350 metres altitude on mineral-rich volcanic sand – a terroir of extraordinary character that gives this wine its distinctive saline minerality.
Grape Variety & Vinification
Predominantly Corinto Nero (Korinthiaki) with a small proportion of other indigenous Sicilian varieties. Direct pressing in a pneumatic press, fermentation in stainless steel, followed by careful bâtonnage over six months – an élevage that imparts texture and depth without sacrificing freshness.
Food Pairing Suggestions
An ideal companion for herb-rich Mediterranean cuisine: grilled octopus with capers and olives, lamb chops with rosemary and thyme, Sicilian caponata or spicy ricotta pasta. Also a revelation with mature goat’s cheese.
