Albillo

The white grape variety Albillo, deeply rooted in the barren highlands of Castile, is the historic texture-giver of the Ribera del Duero. With its fine phenolics, ripe pear aromas and a subtle herbal spice, it brings a creamy richness to the glass, balanced by a salty minerality. Traditionally valued in the Duero Valley in tandem with red grapes: as an aromatic partner, it softens the power of Tempranillo and lends a juicy freshness to cuvées and traditional Clarete wines.

This fine intuition for Castilian identity shapes the wines of Felix Callejo, where Albillo provides finesse alongside Tempranillo and Grenache in the red “Parajes de Callejo” or enlivens the “Viña Pilar Clarete”. That its ethereal herbal spice also shines beyond classic still wines is proven by the Wachisnais project, which uses the grape together with Tempranillo in the profound “Vermut Tintorro”.
