- The 0.54 hectares in the Climat Les Longeays sit at 210 metres altitude in a glorious south-south-east exposure, directly adjacent to the renowned Les Quarts. The iron-rich clay and limestone soil from the Bajocian (Jurassic) imparts the wines‘ characteristic minerality and longevity. Thirty-eight-year-old vines provide depth and concentration.
- Grape Variety & Vinification
- Chardonnay, hand-harvested on 27 August 2022. Whole-bunch pressing and spontaneous fermentation, followed by 17 months of maturation – initially eleven months in Pièces, then in large wooden vats. Complete malolactic fermentation harmonises the acidity. With just 32 mg/l total sulphur and a pH of 3.15, the wine reveals itself precise and unvarnished.
- Food Pairing Suggestions
- The lively acidity and minerality harmonise beautifully with pear and ricotta ravioli in hazelnut butter cream, grilled corn on the cob with honey-butter marinade or a shrimp burger. Also an excellent choice with goat’s cheese or pan-fried monkfish.
